Lemon Bars

1/3 c. margarine or butter
1 c. sugar
1 c. flour
2 eggs
2 T. flour
2 t. finely shredded lemon peel
3 T. lemon juice
1/4 t. baking powder
powdered sugar (optional)

  • Preheat oven to 350°
  • Beat margarine with an electric mixer on medium to high speed for 30 seconds.
  • Add 1/4 cup of the sugar. Beat till combined.
  • Beat in 1 cup flour till crumbly.
  • Press into bottom of an ungreased 8x8x2-inch baking pan.
  • Bake in a 350° oven for 15 to 18 minutes or till golden.
  • Meanwhile, combine eggs, the remaining sugar, the 2 T. flour, lemon peel, juice, and baking powder. Beat for 2 minutes or till thoroughly combined.
  • Pour over hot baked layer.
  • Continue baking in a 350° oven about 20 minutes more or till lightly browned around the edges and center is set. Cool on a wire rack.
  • If desired, sift powdered sugar over top.
  • Cut into bars. Makes 20.

Orange Balls

12 oz. box of vanilla wafers, smashed
6 oz. can concentrated orange juice
1 box powdered sugar
1 stick margarine, melted
1 cup pecans, chopped finely

  • Mix everything together.
  • Form small balls and roll in coconut.
  • Chill overnight.

Cowboy Cookies

2 c. flour
1 t. soda
1/2 t. salt
1/2 t. baking powder
1 c. shortening
1 c. brown sugar
1 c. sugar
2 eggs
2 c. rolled oats
1 t. vanilla
1 pkg. (12 ounces) semisweet chocolate chips (or 2 c. M&M’s)
1 c. chopped pecans (optional)

  • Sift and set aside flour, soda, salt, and baking powder.
  • Cream together shortening and sugars. Add egg; beat until light and fluffy. Add flour mixture and mix well. Add oats, vanilla, chocolate pieces (or M&M’s) and chopped pecans, if desired. Dough will be crumbly.
  • Drop by teaspoonful onto greased cookie sheet. Bake 15 minutes at 350 degrees.
  • Makes 6-7 dozen cookies.
